I love chickpeas. They are so versatile. They can be made so many different ways that I could go an entire month making different recipes without getting bored. (Hmm, that sounds like a challenge I might have to take …) Since they’re so sturdy, they can easily replace meat which is awesome since I’m not a huge meat eater.
I also love BBQ sauce. And being that I don’t eat meat that often, it’s few and far between that I end up using any. Until now.
I found the recipe here and knew immediately that I had to try it. I made a few slight changes, so I’ll list everything below.
BBQ Chickpea and Cranberry Wrap
3 whole wheat wraps
1 can chickpeas, drained
3/4 cup your favorite BBQ sauce (I used a homemade sauce that was just ehhhh…so before I give the recipe I’ll just say use whatever you have)
1/2 cup red onion, diced
3 T dried cranberries
To Make:
- Add BBQ sauce, cranberries, and chickpeas to a medium sized saucepan. Cook on medium heat until bubbly, about 7 minutes. Make sure to keep stirring so nothing sticks or burns.
- When heated through, heat up your wrap either in the microwave for 12 seconds or on a dry pan, 12 seconds each side.
- Assemble in the wrap, add onions and whatever toppings you want and enjoy.
This was really good. It would have been better had I used different BBQ sauce but even then, it was still good.
I loved the sweet from the cranberry with the heat of the BBQ sauce and the potency of the onion (which is why I chose red onions instead of sweet.)
